Grape Variety: Albariño.
Elaboration: Fermentation in the bottle at 12-13ºC and subsequent ageing on the lees until disgorging, when the lees are removed.
Visual Phase: Pale yellow color with golden hues. Small, fine bubble with a persistent thread that rises slowly, crown in the glass.
Smell Phase: Complex and expressive. It manifests a powerful aroma of toasted bread and sponge cake, from the aging on lees, as well as aromas of fresh fruit and white flowers.
Taste Phase: The palate is broad, creamy and persistent with balanced acidity.
Serving temperature: 8 – 10 ºC
Pairing: Fish, shellfish, cheeses, foie, white meats and feathers.
